Spicy Pumpkin Spelt Tortillas
Tortillas are a staple to me. I love a fresh home made tortilla, especially right of the grill. Nothing better than that warm crispy fresh taste. I decided to use some pumpkin in these as well as some cayenne for some kick. These tortillas are not overly flavorfull...the pumpkin is very subtle, which is what I like. I love the flavorfull fillings and my tortillas compliment those flavors.
Spicy Pumpkin Spelt Tortillas
1 1/2 c. Spelt flour
1 1/2 c. whole wheat flour
1 1/4 c. water
4 Tbs. pumpkin puree
1 tsp cinnamon
1 tsp cayenne
pinch of salt
Add dry ingredients together into a bowl and stir to combine. Then add in the pumpkin and slowly add the water. 1 1/4 c. was enough in my batch but you might find you need more or less. Your dough should start to pull away from the edges when combined. Flour your board with either flour and form into ball.
Knead for about 5 minutes. Dough will start to feel elastic to the touch. Next roll out and shape into rectangle and cut into roughly 12 pieces.
Roll into balls and cover with a warm paper towel. You dont want these dough balls to dry out. That will make them really tough to roll out.
Next flour your board again and roll out into a pancake shape one at a time. Once you roll the dough out on the board, pick it up and stretch it to make it as thin as possible. Be careful not to break it!
Toss onto any heated grill or pan and heat for about 3 minutes on each side. Cool on rack.

Way to go on making your own tortillas!! I'm so lazy and just buy my own bread products...but these look good :)

ReplyDeleteyup! I usually find Spelt flour at Whole foods, but any health food store should have it too!=) If you can't find spelt just using all whole wheat flour works too.
ReplyDeleteHi there! Thanks so much for visiting my blog. Wow, I've only tried making tortillas once (wholewheat flour) and it was a total disaster. I could not roll the dough thin enough. Perhaps the pumpkin makes it more moist and easy to roll. I'll have to try it! Thanks!
ReplyDeleteThe trick to tortillas is once you roll them out, pick them up and stretch the dough with your hands to make them super thin! the first few times i broke the dough, hehe, but once you get the hang of it it goes super fast and you can make really super thin ones.
