Body Rockin Chocolate Pumpkin Brownies




My fabulous chef of a mother shared a delicious recipe for healthy chocolate bran brownies with me this morning. And let me tell you...these things rock my socks off! Thanks mom! I subbed the 1/3 c. oil for 1/3 c. pumpkin to make them even more healthy. Give them a shot and let me know what you think! Note: These make more of a dense brownie. Not overly fluffy but very fudgy. I only used 1/2 c. of sugar so they are not overly sweet either. You can add more sugar if you like yours more on the sweet side.

Chocolate Pumpkin Bran Brownies
Makes about 10 bars

2 c. bran cereal (ground to a flour)
3/4 c. spelt flour (any flour will do here so use what you have on hand)
2/3 c. cocoa powder
2 tsp. coffee (optional)
1 tsp. baking powder
1/2 tsp. backing soda

1/2 c. sweetner of choice (I used NuNaturals Baking Blend Stevia)
1 tsp. vinegar
1/3 c. pumpkin puree (or oil)
1 1/2 almond milk

handful of chocolate chips
1/2 c. peanut butter (optional)

Mix dry ingredients together. Then mix the wet. Add wet ingredients to the dry ingredients and mix to combine. Add in chocolate chips. Pour into a greased baking pan and bake at 350 for about 20 minutes. Cool and cut into bars.

Optional: Melt peanut butter and while brownies are still warm drizzle on top for a lovely peanut butter icing.

  3. Thanks so much! Yeah I like them because they are not overly sweet. You can definitely add more sweetener if you'd like but adding the peanut butter topping just takes these to a whole new level of yum!

  8. yeah this is the first time I tried it out. My husband is really sensitive to stevia and doesnt really care for it..but he said with these he couldnt taste the stevia so much. So I guess thats good!
