Figgy Bites

These little mini bars are perfect fall snacks! Packed with oats and dates, they will definitely satisfy that sweet tooth in a perfectly healthy way! Plus they make your kitchen smell amazing.

1/2 c. regular oatmeal
1/2 c. regular oats ground to a fine flour
1/2 tsp. baking powder
1 1/2 Tbs. Agave
1/4 c. unsweetened applesauce
1/8 c. water
pinch of salt

4 oz (115 grams) prunes
56 g. dates (about 4 medium sized dates)
1/2 Tbs. lemon juice
1 tsp. cinnamon
1/2 tsp. ginger

2 Tbs. almonds slices

Mix dry ingredients together and set aside. Combine all the ingredients for the filling into a food processor and pulse to a paste. Set aside. Spray down a mini muffin pan. First take the crust and press down into the bottom of the pan. (this is way easier if you just use your fingers as the crust is a bit sticky=) Take the filling and press down on top. Sprinkle with a few almond slivers. Bake in over at 350 F for about 10-15 minutes. Makes about 16.
